Farmed organically, the vineyard flourishes on a clay / limestone soil on the southern slopes of Aix en Provence
The grapes are harvested by hand. The grapes are de-stemmed and then vatted, with maceration and vinification lasting almost 3 weeks. 40% of this wine is aged in barrels for 1 year.
Colour : Deep red with purple highlights
Nose : Fruity fragrance with a sweet spicy note of paprika
Palate : Pure and round, delicate and extremely greedy; blackberry and black cherry exult our taste buds.
Serve at 18°c
Food and wine pairing
Grilled vegetables, grilled meat and as a cheese, Brie or Coulommiers and for dessert: red fruits and chocolate, chocolate mousse.
Can also be drunk as an aperitif.
